Ottsville farmstead takes on pie-making duties

A long-dormant 161-year-old Bucks County farmstead on 58 acres in Ottsville is now Pie Bird Farm, a scratch pie stand, and emerging hub of community thanks to husband-and-wife duo Jennifer Brodsky and Eric Theesefeld.
Brodsky, who developed a passion for baking during the pandemic, inspired by the bounty of neighboring farms, prepares and offers from-scratch pies made with local and organic ingredients.
“Pie makes people happy and we find so much joy in meeting the pie-lovers who travel from all over to try ours,” says Brodsky, who, along with her husband and small team, prepares all the pies by hand in the farm’s bakehouse. “We use organic, local ingredients – 100% grass-fed cultured butter as well as organic flours and local fruits from our farmer friends like Three Springs Fruit Farm – to make our rustic pies a comfort food delight.”
For her pies, Brodsky takes the freshest peak seasonal ingredients and tucks them into butter-crust shells. Single pies are offered, or a few can be arranged as part of a custom pie board.
Pie Bird’s offerings are available for preorder and farm pickup on Fridays and Saturdays through Pie Bird’s website. Alternatively, customers can find them at pop-up stands throughout the tri-state region, with dates and locations listed on the Pie Bird website. Some pop-up spots include the Doylestown Farmers Market, Third Wheel Cheese Co. in Philadelphia, Juniper Hill Farmers Market in Annandale, N.J., and the Frenchtown Bookshop in Frenchtown, N..

For the upcoming holidays, a selection of sweet and savory pies will be available for preorder later this month, options are subject to change, but may include: Double Crust Apple; Apple and Cranberry Lattice; Purple Sweet Potato; Heirloom Squash and Pumpkin; Pear, Maple and Brown Butter; and Brodsky’s special Stuffing Pie. This is a crust made of stuffing prepared with organic bread, onions, celery, grass-fed cultured butter and spices, then filled with peas, carrots, local turkey and homemade gravy, topped with whipped organic mashed potatoes.
Brodsky’s hands-on experience spans over two decades in both farming and nonprofit work. Theesfeld, once a bike and ski mechanic and shop manager, has become a true Renaissance man over the years with a skillset ranging from farming to cooking to woodworking.
Future plans for the farm include growing a variety of fruit, produce, flowers and heritage grains, hosting classes, workshops and events as well as the construction of a barn to serve as an event space.
