Dining Out — Restaurant Roving: Upscale dining in “a perfect spot”

The seasons change four times a year, and that’s how often the menu will be adapted to meet them at Solstice, Newtown’s newest restaurant.

The upscale restaurant opened this week in the Village at Newtown Shopping Center with a winter menu that will change when spring arrives on March 19. Each seasonal menu will aim to offer the best, freshest, high-quality ingredients the staff can find, said chef Jason Audette. During the local harvest season, that will include ingredients from as many local regions as possible, he said.

Solstice is the first in a franchise that was created by Captivate Hospitality; the franchise is owned by husband and wife Anna and Terry Darby of Lower Makefield Township and their son Rick.

“We are excited to have something of this quality here in Newtown,” said Anna Darby, calling the Village at Newtown “a perfect spot.”

Solstice is open seven days a week serving lunch Monday through Friday, dinner daily, with a shortened menu in between on weekdays. On Sunday an extensive brunch menu is offered.

The menus are designed to offer something for pretty much everyone with dinner entrees that range from vegan carrot spaghetti with white bean puree to a 32-ounce porterhouse steak designed to serve multiple guests.

Other dinner entrees include Cape May seared scallops, crab cakes, Malbec-braised Wagyu short ribs, roast chicken, butternut squash risotto, pan-roasted salmon, and a whole brook trout with cashews and fennel lyonnaise.

There also are handmade pastas and a selection of steaks, salads and side dishes.

Parker House rolls are made daily, topped with apricot glaze and accompanied by allspice butter. Come spring the glaze and butter could change to something seasonal, just as the seasonal risotto will change from squash.

The lunch menu is shorter with a variety of salads, a half-dozen entrees and sandwiches ranging from a filet burger to a chicken Rueben to an avocado melt with jalapeno Havarti.

The brunch menu includes a seasonal omelet, sweet potato waffles, scallops and grits, filet with eggs and buttermilk fried chicken.

During each quarterly period, Solstice will choose a peak of season ingredient and offer a menu featuring that ingredient served several different ways. That might be corn, tomatoes or peaches in summer, and apples or squashes in the fall.

The wine and cocktail lists at Solstice also are substantial, due in part to Anna Darby’s training as a sommelier. They include some regional wines and spirits.
