Three Birds Coffee House will soon have its own flock of coffee shops when Nest, its newest venture, hatches at Easton Public Market.
ThreeBirds co-owners Jennifer Murray and Joe Langdon hope to have their second location open at the market by Sept. 1. Murray said they’ll keep their Bushkill Street location as is, but saw this as a way to expand the business through Downtown Easton.
“The market was one of the very first things we found when we moved to Easton and we were blown away by it,” Murray said. “It’s the anchor of the downtown and when this opportunity came up, we jumped on it immediately. We couldn’t pass it up.”
Nest will be open five days a week, and follow the hours of the Easton Public Market. Murray and Langdon are currently at work redesigning the space. They’ll retain some table seating that they say will offer a quiet nook in which to relax and enjoy a cup.
“We’re thrilled to welcome Nest to the market family,” said Easton Market District Director Megan McBride. “Jen and Joe not only have an outstanding product but bring a passion for community, culture and the arts. We look forward to them working their magic at the market.”
The focus at Nest will be on a rotating blend of ground-to-order coffees sourced from Passenger Coffee & Tea in Lancaster; classic Italian-style espresso drinks, and a variety of cool drinks on tap such as cold brew iced tea, kombucha and lemonades.
The summer’s heat has had lots of customers at the Bushkill spot looking for nitro coffee and the “famous” hibiscus layered lemonade, Murray said. Both will be available at Nest, along with other seasonal offerings.
Customers can also get their quarter or half gallon growlers filled at Nest with nitro, kombucha or lemonade. Cases of hot coffee (¾ gallon) will also be available.
“Our approach to this location is to try to be a really seamless, supportive partner in the market,” Murray said. “Coffee goes with everything.”
Murray said they’re also excited to offer educational sessions on coffee processing techniques and farming practices, the history of tea and even tastings in the market’s Community Room and kitchen.
“We love that it’s such a community feel in there,” Murray said of the market. “We’re very team-oriented and we appreciate that vibe. Everyone in Easton has been so nice and so welcoming to us and we’re really excited to open our second location.”
Nest replaces the space left when Fieldstone Coffee Roasters vacated the market. It is among a group of new vendors coming to Easton Public Market, including Saylors & Co., a local butcher opening early this month, and a yet-to-be-named vendor in the former Olive With a Twist space.
