Recipe of the Week: Indulge in fun foods for Valentines

If you plan on indulging in fun foods on Super Bowl Sunday, you might want to look for something light to serve for Valentine’s Day, which is the following night.
Forget the stereotypical foods for Valentine’s Day. Pretty much anything goes for your favorite valentine as long as it is something he or she will enjoy.
That could be a quick steak and salad with or without a baked potato, a pot of soup that’s dinnertime ready after cooking in the slow cooker all day, or a seafood dish such as baked salmon. “Easy” also can mean prepared entrees that you pick up at a restaurant or supermarket and finish at home. You can always make any meal more special with a favorite dessert and wine.
The important thing is to choose wisely and have a good time. Maybe all you need is chocolate-covered strawberries for dessert to send a heartfelt message without adding a lot of calories. Or a bouquet of flowers for a dieting valentine who would rather have a big salad for an entree.
If you are feeding kids too, you know what they like. You can always order a pizza for them with a special dessert and make something nice for your spouse.
This recipe for decadent truffles from allrecipes.com is a chocolate lover’s delight, but also one that kids could help to make for everyone to enjoy.

Chocolate Truffle Cookies

• 4 (1-ounce) squares unsweetened chocolate, chopped
• 1 cup semisweet chocolate chips
• 6 tablespoons butter
• 3 eggs
• 1 cup white sugar
• 1½ teaspoons vanilla extract

• ½ cup all-purpose flour
• 2 tablespoons unsweetened cocoa powder
• ¼ teaspoon baking powder
• ¼ teaspoon salt
• 1 cup semisweet chocolate chips

Step 1
In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
Step 2
Preheat oven to 350°F. Roll chilled dough into 1-inch balls. Place on ungreased cookie sheets so they are 2 inches apart.
Step 3
Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
