Dining Out: Caleb’s American Kitchen Taco Night offers weekday options

As the national economy slows down, restaurateur and chef Caleb Lentchner is revving up his menu.

“I wanted to create something more economical that could be offered on a weeknight,” he said.

With that, Taco Night was launched at Caleb’s American Kitchen in Lahaska.

Following in the footsteps of Lentchner’s wildly popular Burger Night on Tuesdays, Taco Night takes place each Wednesday night. Along with the regular menu, customers can choose from a selection of four different tacos each week.

Customers can mix and match with orders including two or three tacos plus a side dish. Among the types of tacos Caleb’s will offer are seared mahi-mahi with mango salsa, pork carnitas with salsa verde, marinated grilled chicken with pico de gallo and smoked cauliflower with corn salsa fresco. The tacos are served on corn tortillas; flour tortillas are available on request.

Side dishes include Cuban black beans and rice, Mexican roasted zucchini, side salad and French fries.

Customers can bring their own tequila to the BYOB restaurant and Caleb’s will provide the ingredients for margaritas.

Tacos are not new to Caleb’s, where they are served on the breakfast and lunch menus. Those are usually filled with eggs or seafood, he explained. The Wednesday taco menu will be different, utilizing international flavors rather than replicating traditional Mexican street tacos.

The idea is to have a menu addition that is “light and fun” said Lentchner, who opened Caleb’s nine years ago.

Caleb’s is known for its innovative menus and its extensive use of local produce. “We embrace the local farms in season,” Lentchner said.
